  • 2 teaspoons of olive oil
  • 1 (8 ounces clam juice)
  • 2 cups low-sodium chicken broth
  • 1 cup cubed Yukon Gold potatoes
  • 1 pinch cayenne pepper, or to taste

How To Prepare Scallop Chowder

Directions :

1. Heat olive oil in a skillet for about 2 mins total over medium heat. You can make use of a Dutch oven.

2. Cook and stir continuously until the fat is rendered and the bacon is slightly browned for 2 to 6 minutes. 

3. Still under heat add onion to bacon.

4. Cook and stir until fluffy and translucent for about 3 to 8 minutes. 

5. Pour celery and garlic into the onion mixture, fry until fragrance is perceived.

6. Under high heat, add onion to bacon; then cook and stir until tender and translucent. Reduce heat and cook for another 5 minutes. 

7. Pour clam juice, potato, cayenne pepper, chicken broth, and black pepper into the bacon mixture.

8. Bring to a simmer, reduce heat to medium and cook until potatoes are tender.

9. Pour in the heavy cream and chile pepper into the potato mixture, bring to a simmer.

10. Add the lemon zest and salt. Stir scallops into chowder and cook over medium heat until the scallops are tender and white.

11.Serve on a paper plate with paper towels.
